Vadu Mangai

Ingredients

Tiny mangoes - 6 litres

Salt – 100 gm

Red chillies - 7

Red chillie powder - 6 spoons

Virali manjal (turmeric tuber) - 4

Castor oil - 3 spoons

Mustard powder - 2 spoons

Turmeric powder - 1 spoon

Method

Soak the mangoes in water for 10 minutes and wash them. Spread the mangoes on a cloth and wipe them. Transfer it to a ceramic container or a kal chetti (stone vessel). Grind red chillies, and turmeric into paste consistency. Add salt, the paste, castor oil, mustard and red chillies powder, turmeric powder and mix it with a wooden ladle. Close the container. Keep stirring the pickle every day.

Mouth-watering vadu mangai is ready and the combo with curd rice will taste like manna from heaven.
